I ran out of muffin cups so instead I made a cake loaf. The kids really enjoyed the taste of the loaf. I've noticed that when it comes to the children that they really don't care if the baked goods are healthy or unhealthy. They love them all the same, which is good considering the amount of healthy foods I have been introducing into home over the last couple years. I found the loaf a little blander then I expected but it was still tasty and very edible.

Low Carb Bakery - Blueberry Cream Muffin Mix
I received a bag of Baker's Deluxe Blueberry Cream Muffin Mix from the Low Carb Grocery. These muffins contain all natural ingredients and contain no sugar alcohols. The mix contained 2 separate bags of ingredients. Bag #1 contained all of the dry ingredients and Bag #2 contained the blueberries. Aside from dry ingredients the mix called for 1 egg, 1 egg white, 1/4 cup of sour cream, 3/4 cup of water and 3 tbsp of butter. The dollop of sour cream above slightly resembles a heart.

This sounds really yummy; I think I'd like it as a loaf too! Its nice to see baked goods that are actually pretty healthy!
