#Recipe: Low Carb, High Protein Greek Pizza @Bobs_Red_Mill

So I received a few different products from Bob's Red Mill to try and I decided that I would cook something with them and show you what I made. I decided to use the Low Carb Baking Mix and the Hemp Protein Powder to make a Low Carb, High Protein Greek Pizza. So, I used a pizza dough recipe I had kicking around the house and substituted some ingredients. 


 First of all I mixed 1 packet of Quick Rise Yeast with 1/4 cup of lukewarm water until dissolved.  Then I added a tablespoon of softened butter/margarine, 1 tablespoon of Sugar or Sugar Free Substitute. 1/2 Teaspoon of salt and 1 cup of hot water. Then stir until smooth.


The recipe called for 2 3/4 cups of Flour. The package of Protein Powder says I can substitute 25 percent of my flour with it. So, I mixed together 2 and 1/4 cups of the Low Carb Baking Mix in a separate bowl and I allowed the remaining 1/2 cup to be the Hemp Protein Powder.  I then combined them together with the liquid mixture and kneaded to make a dough that is very green. 


The recipe makes enough for two pans of pizza, I added our homemade greek vinaigrette for the sauce and sprinkled a bunch of oregano on it. I then added some cheese and a whole bunch of Greek ingredients.


My husband liked it a lot, I was a little surprised. Lately much of his health food reactions have been a little stale but he enjoyed this quite a bit. I personally loved this a great deal and I would like to make another with all freezable veggies so I can grab it by the slice when I'm in the mood for some pizza with a dash of protein.
